Ingredients
- 1 cup red lentils
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse lentils under cold water.
- In a large pot, sauté onion, garlic, and ginger until fragrant.
- Add tomatoes, broth, lentils, and spices.
- Bring to a boil, then simmer for 20-25 minutes until lentils are tender.
