Ingredients

  • 2 1/4 tsp active dry yeast
  • 1 1/2 cups warm water
  • 3 cups semolina flour
  • 1 cup all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp salt

Instructions

  • In a large mixing bowl, dissolve yeast in warm water. Let it sit for 5 minutes until frothy.
  • Add semolina flour, all-purpose flour, olive oil, and salt. Mix until a dough forms.
  • Knead the dough for about 10 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour.
  • Preheat the oven to 375°F (190°C).
  • Punch down the dough and shape it into a loaf. Place on a greased baking sheet.
  • Let the loaf rise for another 30 minutes.
  • Bake for 25-30 minutes until golden brown.
  • Let cool before slicing and serving.

Notes

  • Semolina flour can be found in most grocery stores or specialty markets.
  • This bread has a lovely chewy texture and is great for making bruschetta.
