Ingredients

  • 3 medium beets, peeled and grated
  • 2 carrots, grated
  • 1 onion, diced
  • 4 cups beef broth
  • 2 cups cabbage, shredded
  • 2 potatoes, diced
  • 1 can diced tomatoes
  • 2 garlic cloves, minced
  • 1 tbsp vinegar
  • Salt and pepper to taste
  • Sour cream and fresh dill for garnish

Instructions

  • In a large pot, sauté onion and garlic until softened.
  • Add beets, carrots, and potatoes. Cook for 5 minutes.
  • Add broth, tomatoes, and cabbage. Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Stir in vinegar, season with salt and pepper.
  • Serve with a dollop of sour cream and fresh dill.
