Equipment

Ingredients
- 3 medium beets, peeled and grated
- 2 carrots, grated
- 1 onion, diced
- 4 cups beef broth
- 2 cups cabbage, shredded
- 2 potatoes, diced
- 1 can diced tomatoes
- 2 garlic cloves, minced
- 1 tbsp vinegar
- Salt and pepper to taste
- Sour cream and fresh dill for garnish
Instructions
- In a large pot, sauté onion and garlic until softened.
- Add beets, carrots, and potatoes. Cook for 5 minutes.
- Add broth, tomatoes, and cabbage. Bring to a boil.
- Reduce heat and simmer for 30 minutes.
